🇺🇸 Who are Becky and Elyse?
This private day was spent with Becky, a talented food anthropologist and photographer from New York, and her friend Elyse from New-York as well, on a tailor-made private guided tour of the Basque inland villages, blending culture, gastronomy, landscapes and intimate moments only locals usually experience.
Morning pickup in Biarritz – Starting the day like locals
The day began with a private hotel pickup and a coffee at Hôtel Le Garage, one of Biarritz’s most iconic boutique hotels.
Comfortably seated in a premium vehicle, we left the coast behind and headed inland - where the Basque Country reveals a very different, more rural and deeply authentic identity.
January light was already beautiful: crisp air, clear skies, soft winter colors on the hills. The perfect conditions for a slow, immersive discovery.
Espelette - Private walking tour & Basque heritage
Our first stop was Espelette, world-famous for its red chili peppers but still wonderfully preserved when visited at the right time.
With almost no one in the streets, we enjoyed a private guided walking tour through the village:
Traditional Basque houses with white façades and red shutters
Lines of Espelette peppers drying naturally on façades, a centuries-old tradition
Stories about Basque architecture, rural life, matrilineal heritage and local identity
Strolling slowly, stopping for photos, taking time to talk - this is exactly how Espelette should be discovered. Becky, being both a photographer and a culinary anthropologist, was particularly fascinated by how food, architecture and identity are intertwined here.
As hunger started to gently set in, it was time to head somewhere very special.
The road to the mountains – A scenic drive few travelers ever take
Leaving Espelette, we followed small mountain roads known only to locals, driving through valleys bathed in winter light.
The scenery gradually changed: rolling hills became mountains, farms appeared, and the Basque Country felt suddenly wild and deeply peaceful.
This drive alone is often a highlight of the day - a moment where guests truly disconnect and feel immersed in the landscape.
Bidarray – A timeless church, a mountain cemetery & silence
Before lunch, we stopped in Bidarray, a tiny mountain village rarely visited by travelers.
We walked around the historic church and its cemetery, perched above the valley with panoramic views over the mountains.
Absolute silence. No crowds. No buses. Just nature, stone, sky — and time standing still.
It felt like a privilege to be there alone.
We took our time, captured beautiful photographs (all photos used are Becky’s), and simply enjoyed the moment.

A hidden mountain auberge – Wood-fire cooking & Basque gastronomy
Then came lunch — in a local mountain auberge that you simply cannot find without knowing someone.
A place where reservations are made by trust, word of mouth, and relationships.
Inside, the atmosphere was unforgettable:
A huge open fireplace dominating the dining room
Chefs grilling meat directly over wood fire, in front of guests
A warm, authentic, mountain-soul ambiance
We shared several exceptional starters:
Wild mushrooms cooked to perfection
Basque Kintoa ham, one of the finest pork products in the region
For the main course, we shared a wood-grilled pork côte, flame-grilled, perfectly cooked, and served with generous, rustic sides — simple, honest, and absolutely delicious.
To accompany the meal, my New York friends discovered Basque Irouléguy wine.
And yes… they were served very generous glasses — although in reality, the oversized glass was simply perfect to let the wine breathe properly (a necessary “Basque technique”, of course).
To finish, a small glass of Menta, the traditional Basque mint digestif — a fun and memorable discovery for American guests.
Ainhoa – One of the most beautiful villages in France
After lunch, we continued to Ainhoa, officially listed among Les Plus Beaux Villages de France.
Here again, the timing was perfect. The village felt calm and untouched.
We explored:

The church, visited privately, with a few surprises reserved during the visit
Stories about border life between French and Spanish Basque Country
Smuggling routes, pilgrims on the Camino de Santiago, and village legends
Ainhoa is not just beautiful — it carries a deep historical and cultural significance that comes alive when explained by a local guide.
Bidart – A coastal stop before sunset
On the way back to Biarritz, we made a final stop in Bidart, a traditional Basque fishing village overlooking the Atlantic Ocean.
As daylight slowly faded, Becky and her friend discovered:

The contrast between inland mountains and Basque coastline
A gentle transition back to the coast, before returning comfortably to Hôtel Le Garage in Biarritz.
